Champagne Mojito

Give this classic cocktail an elegant new twist by swapping soda with champagne. You won't regret it!

Ingredients: 

-- Half a fresh lime

-- 1 teaspoon brown sugar

-- 8 fresh mint leaves

-- Crushed ice

-- Dark rum

-- Champagne to top

Method:

Cut the lime into quarters, then place the brown sugar, mint leaves and lime into a tall glass and mix. Add crushed ice to the brim of the glass and pour over rum. Mix and turn all ingredients then top with champagne. Garnish with a sprig of fresh mint and a straw.

Southern Bride

This wedding martini is as easy and refreshing as the quintessential southern bride.

Ingredients:

-- 2 parts gin

-- 1 part grapefruit juice

-- 3 dashes maraschino liqueur

Method:

Fill a shaker with ice cubes, add all ingredients and shake and strain into a cocktail glass. Bliss!

Rhubarb and Apple 

This beautiful purple hued cocktail is perfect for warm summer days.

Ingredients:

-- 50ml gin

-- 75ml apple and rhubarb juice

-- Dash of lemon

-- 50ml ginger beer

Method:

Pour the first three ingredients into a glass filled with ice. Stir then top with ginger beer. Garnish with a thin stick of rhubarb.

Blackberry Punch

If you're after a fresh and fruity drink then this sweet and sour blackberry punch will do the trick. Ideal for afternoon and evening weddings.

Ingredients:

-- 3 parts vodka

-- 2 parts simple syrup

-- 2 parts lemon juice

-- 1 part chambord

-- Champagne

-- 3 whole blackberries

Method:

Fill a shaker with ice and add vodka, simple syrup, lemon juice and chambord. Shake and strain into a tall glass filled with crushed ice. Top with champagne and garnish with blackberries.

Pear and Sparkling Cider

Earthy and sweet, this pear and cider cocktail is tinged with whiskey and is a great all year round drink.

Ingredients:

-- 2 cups pear nectar

-- 2 cups sparkling cider

-- 2 cups seltzer

-- 1/2 cup bourbon whiskey

-- 1 pear

Method:

Stir together the pear nectar, sparkling cider, seltzer and whiskey. Core and cut pear into wedges and place in glasses and pour cocktail over the top. Serve immediately.

Dark 'n' Stormy

Embodying two great tastes of the tropics, the dark 'n' stormy cocktail may be darker than most but is just as refreshing.

Ingredients:

-- 2 oz dark rum

-- 4 oz ginger beer

-- 1/2 cup ice

-- Lime wedges

Method:

Combine the rum and ginger beer in an old fashioned glass. Add ice and stir. Garnish with lime wedges.

Blushing Bride

Super simple to make and only three ingredients! The real charm of this cocktail is the amazing blush color that is created.

Ingredients:

-- 1 oz peach schnapps

-- 1 oz grenadine

-- 4 oz champagne

Method:

Pour peach schnapps and grenadine into a champagne flute. Top with champagne.

Sangria Flora

This sangria is sure to deliver lots of praise. Fruity, crisp and super delish!

Ingredients:

-- 1 bottle dry white wine

-- 1 cup St.Germain

-- 2 fresh peaches

-- 6 fresh strawberries

-- 6 fresh raspberries

Method:

Stir all ingredients in a pitcher and leave to soak for 15 minutes. Serve in an ice filled glass with a spoon straw so you can enjoy the fruit whilst drinking.

Banana Daiquiri

If it's good enough for Ernest Hemmigway then it's good enough for your guests. This delicious frozen cocktail rates as one of the all time favorite daiquiris.

Ingredients:

-- 37.5ml light rum

-- 1 tbsp triple sec

-- 37.5ml lime juice

-- 1 banana

-- 1 tsp sugar

-- 1 maraschino cherry

Method:

Pour all ingredients minus the cherry into a blender with a cup of ice. Blend until smooth. Pour into a hurricane glass and garnish with the maraschino cherry.

Kiwi Colada

The combination of kiwi and melon liqueur give this cocktail a tangy flavor and a luscious green hue.

Ingredients:

-- 5 kiwis

-- 3 cups ice

-- 1/4 cup light rum

-- 1/4 cup melon liqueur

-- 3 tbsp coconut cream

-- 1 cup fresh pineapple

Method:

Peel kiwis and place 4 in blender. Add ice and remaining ingredients and blend until smooth. Strain and discard seeds. Divide evenly among glasses and garnish with sliced kiwi and/or pineapple.

Basil Gimlet

A twist on the traditional gimlet, this delightful basil version is the perfect way to enjoy the abundance of sweet summer basil.

Ingredients:

-- 8 basil leaves

-- 1 1/2 oz gin

-- 1 lime

-- 1-2 tbsp maple syrup

Method:

Gently muddle the basil leaves in a mixing glass. Add remaining ingredients, fill with ice and shake well. Strain into martini glasses.

Summer Berry Sling

A beautifully balanced blend of fruity flavors with a ginger kick. "Mocktails" don't get much better than this!

Ingredients:

-- 6 strawberries

-- 10ml elderflower cordial

-- 10ml ginger syrup

-- 10ml fresh lemon juice

-- 60ml cranberry juice

-- 60ml apple juice

-- Lemon slice

-- Strawberry

Method:

Muddle the strawberries in a cocktail shaker then add the elderflower cordial, ginger syrup, lemon, cranberry and apple juices. Shake with ice and strain into highball glasses. Garnish with lemon slices and strawberries.
